BBQ Beef Fajita Wraps
- - boneless beef sirloin steaks, cut into strips Whole Foods 1 lb For $7.99 thru 02/09
- 1-1/2 qt. red peppers, cut into strips
- 1-1/2 qt. onions, thinly sliced
- 1-1/2 cup oil
- 3 cups BULL'S-EYE Sweet Barbecue Sauce
- 24 each flour tortillas (10 inch)
- 3 cups green peppers, chopped
- 3 cups Monterey Jack cheese, shredded
- Stir-fry meat, red peppers and onions in hot oil in large skillet on medium-high heat 6 to 8 min.
- or until meat is cooked through.
- Add barbecue sauce; stir.
- Cook until heated through, stirring occasionally.
- Spoon 1-1/4 cups of the meat mixture down center of each tortilla.
- Fold in sides of tortilla, then roll up tightly from bottom.
- Place wraps, seam-sides down, in parchment paper-lined full sheet pan.
- Cover and refrigerate until ready to serve.
- For each serving: Place 1 wrap on rack of broiler pan; top with 2 Tbsp.
- each of the green peppers and cheese.
- Broil 1 min.
