Sour Cream Raisin Bars

  1. Heat oven to 350F.
  2. Place raisins and water into 2-quart saucepan.
  3. Cook over medium heat 10-12 minutes or until raisins are soft and plump.
  4. Drain; cool 30 minutes.
  5. Set aside.
  6. Combine flour, oats, brown sugar, butter and baking soda in bowl.
  7. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs.
  8. Press 3 cups crumb mixture onto bottom of ungreased 13x9-inch baking pan.
  9. Combine sugar, sour cream, egg yolks and cornstarch in 2-quart saucepan.
  10. Cook over low heat, stirring occasionally, 15-20 minutes or until mixture comes to a boil.
  11. Boil 1 minute.
  12. Remove from heat; stir in raisins.
  13. Spread filling over crumb crust; sprinkle with remaining crumb mixture.
  14. Bake 25-35 minutes or until lightly browned.
  15. Cool completely; cut into bars.
