Karen's Macaroni and Cheese Casserole
- 1 (14 ounce) box macaroni noodles
- 16 ounces Velveeta cheese, cubed small
- 5 -6 cups cheddar cheese, shredded
- 34 cup parmesan cheese, shredded
- 12 ounces broccoli, frozen cut
- 12 cup frozen mixed vegetables
- 14 cup butter
- 14 cup milk
- 1 cup seasoned croutons
- Preheat the oven to 400 degrees.
- Add macaroni to 5 qts of boiling water.
- Boil for 6 minutes.
- Using a spoon, lightly crush croutons.
- Some chunks are desired.
- Add the brocoli and mixed vegetables to the macaroni and water.
- Keep boiling for an additional 2 minutes.
- (Do not leave the noodles in the water for more than 8 minutes total) Drain.
- Put the macaroni/vegtable mixture in a 13 x 9 inch backing dish.
- Mix in the butter, milk and all the cheeses (reserve 1big handful of shredded cheddar cheese).
- Add your desired amount of black pepper and mix well.
- Sprinkle crushed croutons on top of casserole.
- Bake for 20 to 25 minutes, or until cheese is melted (you should hear the bubbling from the velveeta).
