Apple Cream Cheese Torte Recipe
- 1 1/2 c. unbleached all-purpose flour
- 1/2 c. unsalted butter - (1 stick) chilled, and cut into pcs
- 1/2 c. sugar
- 1 tsp vanilla extract
- 1 pch salt
- 1 pkt cream cheese - (8 ounce) room temperature
- 1/4 c. sugar
- 1 lrg egg
- 1 tsp vanilla extract
- 1/3 c. sugar
- 1/2 tsp grnd cinnamon
- 4 lrg Granny Smith apples peeled, cored, and thinly sliced - (abt 3 c.)
- 1/4 c. sliced almonds
- Make Crust: Preheat oven to 400 degrees.
- Wrap outside of 9-inch-diameter springform pan with 2 3/4-inch-high sides with foil.
- Combine all ingredients in large bowl.
- Using fingertips, mix till moist dough clumps form.
- Gather dough into ball.
- Press onto bottom and 3/4 inch up sides of pan.
- Freeze 10 min.
- Bake till crust is light golden brown, about 10 min.
- Remove from oven.
- Reduce oven temperature to 350 degrees.
- Make Filling: Beat all ingredients in large bowl till smooth.
- Pour filling into crust.
- Smooth top.
- Make Topping: Combine sugar and cinnamon in large bowl.
- Add in apple slices and toss to coat.
- Arrange atop filling.
- Sprinkle with almonds.
- Bake torte till crust is deep golden brown and apples are tender, about 1 hour 30 min.
- Remove from oven; cold 1 hour.
- Cover; chill overnight.
- (Torte can be prepared 3 days ahead.
- Keep refrigerated.)
- Run small knife around pan sides to loosen torte.
- Remove pan sides.
- Place torte on platter.
- Serve cool.
- This recipe yields 8 servings.
