Colonel Sanders Carrot Almond Ring
- 34 cup almonds, blanched
- 1 tablespoon butter
- 1 lb peeled carrot, grated
- 34 cup beaten egg
- 1 12 cups milk
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon finely grated onion
- Saute almonds in butter until golden.
- Coarsely chop almonds.
- Grate or shred carrots.
- Cook carrots in boiling water until tender.
- Drain carrots and place in a baking ring.
- Beat the eggs slightly, then add all of the other ingredients.
- Mix well and pour evenly over the carrots.
- Place baking ring in a pan of water.
- Bake 35-40 minutes at 325 F degrees, until firm.
- Serve.
