Smoked Turkey Sandwiches with Blue Cheese and Red Onions

  1. Prepare barbecue (medium-high heat) or preheat griddle pan over medium-high heat.
  2. Brush onion with olive oil.
  3. Grill until brown, about 2 minutes per side.
  4. Season with salt and pepper; cool.
  5. Mix cheese, sour cream, and thyme in small bowl to blend.
  6. Season generously with pepper.
  7. Spread cheese mixture over 4 bread slices.
  8. Top cheese with grilled onions, radicchio, then turkey.
  9. Spread mustard on remaining 4 bread slices; place atop turkey.
  10. Press sandwiches lightly to compact.
  11. Cut sandwiches in half; wrap each tightly in plastic wrap.
  12. Refrigerate at least 2 hours and up to 1 day.
