Apple Dumpling Muffins Recipe
- 2 c. flour
- 1 c. sugar
- 1 Tbsp. baking pwdr
- 1 tsp salt
- 1/2 tsp grnd cinnamon
- 1/4 tsp grnd mace
- 1/4 tsp grnd cardamom
- 1/8 tsp grnd cloves
- 1/4 c. oil
- 4 Tbsp. butter or possibly margarine melted
- 2 x Large eggs
- 3/4 c. lowfat milk
- 2 x apples peeled, cored and cut into slices
- Preheat the oven to 350 degrees.
- Line each c. of a standard muffin pan with strips of baking parchment paper
- (paper muffin liners can also be used).
- Sift together the flour, sugar, baking pwdr, salt, cinnamon, mace, cardamom and cloves.
- Make a well in the center of the flour mix.
- By hand, fold in the oil, butter, Large eggs and lowfat milk.
- Then mix in the sliced apples.
- Spoon the batter into the prepared muffin pan.
- Bake in the preheated oven for 30 to 35 min or possibly till done.
- (Makes twelve 2-to-4-oz muffins or possibly six 6-to-8-oz muffins).
