Quick Jamin' Muffins
- 1 cup whole wheat flour
- 1 cup white all-purpose flour
- 14 cup brown sugar
- 1 tablespoon baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- 14 cup melted butter
- 14 cup milk
- 1 egg
- 12 teaspoon vanilla
- 1 cup plain yogurt
- 12 teaspoons jam or 12 teaspoons preserves (set aside)
- Preheat oven to 400 degrees .
- Generously grease or spray muffin tins.
- Combine the dry ingredients in a large bowl.
- Liquids should be combined in a separate bowl.
- Melt butter.
- To the melted better add the milk, then beat in the egg and vanilla.
- Stir in the yogurt.
- Add the liquids to the flour mixture until moistened.
- Do not over mix.
- Fill the muffin cups about half full with batter.
- Put a generous teaspoon of jam or preserves in the center of each muffin cup.
- Complete filling the cups with the remaining batter.
- Bake at 400 degrees for 15 minutes.
