Anzac Biscuits (Cookies) Recipe
- 70 gm butter
- 1 dsp golden brown syrup
- 1/2 tsp bicarbonate of soda
- 2 Tbsp. boiling water
- 1/2 c. rolled oats
- 1/2 c. coconut
- 1/2 c. plain flour
- 1/2 c. sugar
- Preheat the oven to 180 c.
- 1.
- Put the oats, coconut, flour and sugar in a big mixing bowl.
- 2.
- Heat the golden brown syrup and butter together in a saucepan till warm.
- 3.
- Put the bicarbonate of soda and boiling water in a small bowl and mix then add in to the butter/syrup mix in the saucepan.
- ALLOW THE Mix TO FOAM.
- 4.
- Pour the melted mix on top of the dry ingredients and mix very well.
- 5.
- Drop teaspoonsful of the mix onto greased, non-stick oven trays, leaving room for the cookies to spread.
- 6.
- Bake for 20 min then take the tray out of the oven and leave the biscuits on the tray for 2 min then remove and cold on a wire rack.
