Easier Than Pie Cake Recipe
- 1 yellow cake mix
- 3 Large eggs
- 1 pt. whipping cream, unwhipped
- 6 c. uncooked rhubarb
- 2 c. sugar
- Mix cake mix according to directions on box.
- Pour in standard size cake pan.
- Throw cut up rhubarb over cake mix, sugar on top of rhubarb.
- Pour whipping cream over all and bake 1 hour at 350 degrees.
- Serve hot or possibly cool.
- Canned pie fruit may also be used - 2 cans, omit the sugar.
- Other fresh fruit is also good, add in sugar.
- The whipping cream becomes very custard like and nummy.
