1996 3rd Place Winner: Pecan Cookies (Polvorones) Recipe

  3. Heat oven to 350'F.
  4. Beat 3/4 c. of the sugar, butter and lard in large bowl of electric mixer on high speed till light and fluffy; about 3 min.
  5. Add in egg yolk and vanilla; beat till smooth.
  6. Beat in flour, cinnamon, anise seed and salt till well mixed.
  7. Stir in pecans.

  9. Roll walnut-size pcs of dough between palms to make round balls.
  10. Put remaining 1/4 c. sugar in pie plate; roll dough balls in sugar.
  11. Place balls 5 inches apart on ungreased cookie sheet.
  12. Press each ball with bottom of a glass dipped in sugar to about 1/4-inch thickness.

  14. Bake 10 min.
  15. Reduce oven to 300'F and continue baking till lightly browned, 12 to 15 min.
  16. Remove to cooling rack.
  17. Note: An additional 1/2 c. butter can be substituted for the lard.
  18. Also, you may bake the cookies at a constant 325'F; cooking time should be about the same.
