Bourbon Barbecue Sauce
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 cups onions chopped
- 2 each garlic cloves crushed
- 1/2 cup molasses
- 1 cup ketchup
- 1/4 cup red wine vinegar
- 1 teaspoon dry mustard
- 1/4 teaspoon black pepper
- 2 tablespoons lemon juice
- 1/2 teaspoon lemon zest
- 1 tablespoon soy sauce, tamari
- 1 tablespoon paprika
- 13 cup bourbon whiskey
- In large, heavy saucepan, melt butter with oil.
- Saute onions until tender.
- Add garlic and cook 2 minutes longer.
- Combine molasses, ketchup, vinegar, mustard, pepper, lemon juice, lemon rind, soy sauce, paparika, and bourbon.
- Stir into onion mixture.
- Bring to a boil, reduce heat, and simmer for 30 minutes, stirring occasionally.
- Cool and refrigerate in covered container.
