Cannoli Cups
- 1 (15 ounce) container ricotta cheese
- 2 tablespoons sugar
- 2 teaspoons vanilla extract
- 14 cup shelled roasted, salted pistachios, chopped
- 1 (6 ounce) box Archer Farms Dark Chocolate Filled Butter Wafer Cookies
- In a large bowl, whisk together the ricotta, sugar, and vanilla until the sugar dissolves.
- Divide among 6 cups.
- Sprinkle the pistachios on top and serve with the waffle cookies.
