BBQ Pork Ribs with BULL'S-EYE & Parmesan Mashed Potatoes
- Spice Rub
- 1-1/2 cups Cajun seasoning
- 1-1/2 cups ground black pepper
- 1 cup sugar
- 3/4 cup ground cumin
- 3/4 cup ground allspice
- 24 each pork baby back ribs (2-lb./900-g racks)
- Braising Liquid
- 3-3/4 qt. Bull's-Eye Bold Original Barbecue Sauce, divided
- 1-1/2 gal. water
- 6 cans cola
- 1/2 cup salt
- 2-1/4 qt. carrots, large dice
- 2-1/4 qt. celery, large dice
- 1 qt. onions, large dice King Sooper's 1 lb For $0.99 thru 02/09
- Parmesan Mashed Potatoes
- Yukon gold potatoes, unpeeled, large dice
- 3 cups butter, melted
- 2-1/4 cups Kraft Shredded Parmesan
- to taste salt
- to taste ground white pepper
- Spice Rub: Mix first 5 ingredients.
- Rub scant 1/4 cup (50 mL) onto both sides of each rib rack.
- Refrigerate until ready to use, or up to 24 hours.
- Braising Liquid: Mix 2-1/4 qt.
- (2-1/4 L) barbecue sauce (or 1-1/2 cups 375mL barbecue sauce for trial recipe) and remaining ingredients.
- Pour about 2 qt.
- (2 L) sauce over 4 rib racks in each of 6 (4-inch-deep) hotel pans (or in 1 hotel pan for trial recipe); cover.
- Bake in 400 degrees F standard oven 2 hours.
- Remove ribs from pans; place in sheet pans.
- Cover with foil to keep moist.
- (Discard liquid or see Tip below.)
- Parmesan Mashed Potatoes: Pour enough water over potatoes in large pot to cover; season with salt.
- Cook 20 min.
- or until potatoes are tender; drain.
- Mash with butter and cheese; season with salt and white pepper.
- For each serving: Brush 1 rib rack with 1/4 cup (50 mL) of the remaining barbecue sauce.
- Bake in 400 degrees F standard oven 8 to 10 min.
- or until heated through.
- Place 1 rack on serving plate.
- Add 1 cup (250 mL) Parmesan Mashed Potatoes.
