Mexican Coffee Cake Recipe
- 2 1/2 c. flour
- 1 c. brown sugar
- 3/4 c. sugar
- 3/4 c. vegetable oil
- 1/2 teaspoon salt
- 1 to 2 tbsp. cinnamon
- 1 c. buttermilk
- 1 teaspoon baking soda
- 1 teaspoon baking pwdr
- 1 egg
- 1/2 c. butter, melted
- 1 c. pecans, minced
- Mix first 6 ingredients till crumbly.
- Reserve one c. for topping.
- Add in remaining ingredients except for butter and pecans and beat 4 min.
- Pour into a 9x13 inch greased and floured pan.
- Add in topping and pecans and bake at 350 degrees for 20 min.
- Remove and drizzle melted butter over top.
- Cook 10 min longer.
- Serve hot or possibly cooled.
