Taco Mac

  1. Heat oven to 350F.
  2. Cook pasta according to package directions until still slightly firm.
  3. Drain.
  4. Cook ground beef in 12-inch skillet over medium-high heat until browned; drain fat.
  5. Add taco seasoning and water according to package directions; cook according to package directions.
  6. Melt butter in 3-quart saucepan until sizzling; stir in flour.
  7. Cook over medium heat, stirring occasionally, 1 minute or until smooth and bubbly.
  8. Add half & half; reduce heat to medium-low.
  9. Add cheese; cook, stirring occasionally, 3-4 minutes or until sauce is thickened.
  10. Stir in cooked pasta and ground beef mixture.
  11. Spoon into ungreased 3-quart casserole.
  12. Sprinkle crushed corn chips over macaroni and cheese.
  13. Bake 20-25 minutes or until cheese is bubbly and turning brown on edges.
  14. Serve with lettuce, tomatoes and sour cream.
