Ukrainian Poppy Seed Cake

  1. Pour boiling water over the poppy seed and drain well over a fine sieve.
  2. Cover poppy seed with 3/4 cup of hot milk and soak overnight.
  3. Cream the butter; add the sugar gradually and beat until light.
  4. Stir in the vanilla and poppy seed DO NOT drain seeds from the milk; beat well.
  5. Sift the flour with the dry ingredients 3 times.
  6. Add the flour gradually to the first mixture, stirring until well blended.
  7. Beat the egg whites until stiff and fold into the batter.
  8. Spoon into a buttered cake pan.
  9. Bake in a moderate over 350F.
  10. for about 30 minutes, or until done when tested.
  11. Remove from the pan and place on a cake rack.
  12. Ice with a favorite chocolate icing.
