Tomato Coconut Curry

  1. Sautee onions in olive oil until transparent, then add garum masala.
  2. Add tomato paste and coconut milk, stirring well, and thin with water.
  3. Add tofu and vegetables.
  4. Simmer for 45 minutes to 1 hour.
  5. Serve over rice, quinoa, or couscous, or as is.
  6. For non-vegans, try substituting shrimp or chicken for tofu.
