Cheesy Smoked Corn Quesadillas

  1. In bowl combine corn, red and green peppers and jalapeno pepper.
  2. Spoon over bottom half of each tortilla.
  3. Fold over.
  4. Heat nonstick skillet over medium heat.
  5. Cook tortillas for 3 minutes each side or until golden brown and cheese is melted.
  6. Let stand for 5 minutes before cutting into 3 wedges each.
