Pralines
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup light cream (half&half)
- 3 tablespoons butter, unsalted
- 6 ounces pecans optional
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- In a saucepan over medium heat, combine the sugars, half and half and the butter.
- Using a heat resistant or wood spatula stir the mixture to 232AF.
- At 230AF add the remaining ingredients and stir to 237AF.
- Remove from heat and let the mixture cool undisturbed and uncovered to 214AF.
- At 212AF stir the mixture for a few seconds and drop tablespoons full on wax paper or on a silicone baking mat.
- Let harden.
- Note: If the mixture firms or becomes crystallized before it was dropped, reheat the mixture with a few drops of water.
- Let cool slightly and drop on wax paper.
