Pralines

  1. In a saucepan over medium heat, combine the sugars, half and half and the butter.
  2. Using a heat resistant or wood spatula stir the mixture to 232AF.
  3. At 230AF add the remaining ingredients and stir to 237AF.
  4. Remove from heat and let the mixture cool undisturbed and uncovered to 214AF.
  5. At 212AF stir the mixture for a few seconds and drop tablespoons full on wax paper or on a silicone baking mat.
  6. Let harden.
  7. Note: If the mixture firms or becomes crystallized before it was dropped, reheat the mixture with a few drops of water.
  8. Let cool slightly and drop on wax paper.
