Pesto Primavera
- 16 ounces frozen mixed vegetables (1 bag) or 16 ounces stir fry vegetables (1 bag)
- 2 tablespoons olive oil
- 12 ounces spaghetti, thin spaghetti, cooked
- 12 cup pesto sauce
- 2 fresh garlic cloves, finely chopped
- 13 cup olive oil
- 12 cup chicken broth or 12 cup vegetable broth
- 13 cup parmesan cheese
- Pour 2 tbsp olive oil into large pan, add frozen vegetables and garlic and cook until thawed but still crisp.
- Add fresh vegetables of your choosing, pesto sauce, broth, and stir.
- When everything has reached the same temperature, add pasta and olive oil.
- Toss, serve with parmesean cheese.
