Chicken and Vegetable Stew
- 1 Tbsp. oil
- 1 lb. (450 g) boneless skinless chicken breasts, cut into bite-size pieces
- 10 small carrots (1/2 lb./225 g) King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup 25%-less-sodium chicken broth
- 1/2 cup Philadelphia Cream Cheese Product
- 2 leeks, white parts only, sliced into rounds
- Heat oil in large pot on medium heat.
- Add chicken and carrots; cook 5 min., stirring frequently.
- Add broth and cream cheese.
- Bring to a boil; reduce to a simmer, cover and cook for 10 min.
- or until chicken is done, adding leeks in last 5 min.
