Chicken and Vegetable Stew

  1. Heat oil in large pot on medium heat.
  2. Add chicken and carrots; cook 5 min., stirring frequently.
  3. Add broth and cream cheese.
  4. Bring to a boil; reduce to a simmer, cover and cook for 10 min.
  5. or until chicken is done, adding leeks in last 5 min.
