Newfoundland Spiced Blueberry Jam

  1. Pick over, wash and measure blueberries.
  2. Put in a heavy stainless-steel pan.
  3. Crush the bottom layer.
  4. Add 1/2 cup of water and 3 tbsp.
  5. lemon juice.
  6. Cook over moderate heat, bringing to a boil and simmering until almost tender (about 10 minutes).
  7. Add 8-1/2 cups of heated sugar and 1/2 tsp.
  8. salt.
  9. Add spices tied in cheesecloth.
  10. Boil rapidly, stirring constantly, until mixture thickens.
  11. (A small amount dropped on a plate will stay in place.)
  12. Remove from heat; take out spices and skim.
  13. Pour into sterilized bottles and seal as usual.
