Pepper & Cheddar Country Morning Skillet
- 2 Tbsp. oil
- 1-1/2 lb. red potatoes (about 5), cooked, cubed King Sooper's 5 lb For $1.88 thru 02/09
- 1/2 cup chopped green peppers
- 2 Tbsp. chopped onions
- 1 cup cholesterol-free egg product
- 1 cup KRAFT 2% Milk Shredded Cheddar Cheese
- Heat oil in large nonstick skillet on medium heat.
- Add vegetables; cook 5 min.
- or until potatoes are lightly browned, stirring occasionally.
- Make 4 wells in potato mixture; fill with egg product.
- Cook 3 to 4 min.
- or until egg product is set.
- Sprinkle with cheese; cover.
- Cook 1 min.
- or until melted.
