Brown Butter Tortellini with Spinach and Ham
- 20 oz Cheese filled Tortellini
- 6 oz Fresh baby spinach
- 8 oz Ham or ham steak
- 1 large Red bell pepper
- 1/4 cup butter (not margarine)
- 1 Coarsely ground black pepper - optional
- To cook tortellini, bring salted water to a boil in casserole.
- Add tortellini and cook according to directions.
- As tortellini cooks, place spinach into large colander.
- Dice ham.
- Finely dice red bell pepper.
- Drain cooked tortellini over spinach in colander.
- Add butter to a skillet.
- Heat over medium heat for 5 to 7 minutes or until butter is a deep brown color.
- Immediately add bell peppers.
- Reduce heat to low.
- Add ham tortellini and spinach.
- Then gently toss to coat.
- Serve.
- Sprinkle with black pepper, if desired.
