Brown Butter Tortellini with Spinach and Ham

  1. To cook tortellini, bring salted water to a boil in casserole.
  2. Add tortellini and cook according to directions.
  3. As tortellini cooks, place spinach into large colander.
  4. Dice ham.
  5. Finely dice red bell pepper.
  6. Drain cooked tortellini over spinach in colander.
  7. Add butter to a skillet.
  8. Heat over medium heat for 5 to 7 minutes or until butter is a deep brown color.
  9. Immediately add bell peppers.
  10. Reduce heat to low.
  11. Add ham tortellini and spinach.
  12. Then gently toss to coat.
  13. Serve.
  14. Sprinkle with black pepper, if desired.
