Banana Nut Chip Ice Cream Recipe
- 4 x Overripe bananas
- 1 Tbsp. Lemon juice
- 1 tsp Vanilla extract
- 1 c. Sugar
- 2/3 c. Lowfat milk, chilled
- 1 1/3 c. Heavy cream, chilled
- 1/2 c. Walnuts, coarsely minced
- 1/2 c. Chocolate chips
- I just made this and it's quite good.
- It's inspired by Ben & Jerry's Chunky Monkey, one of my favorite flavors, but the recipe is my own adaptation after looking at banana ice cream recipes in several cookbooks.
- Let me know what you think, sp which I can possibly refine it further.
- Peel the bananas and cut into chunks.
- Puree in blender with the lemon juice.
- Add in vanilla and sugar and blend till smooth.
- Add in lowfat milk and blend again, briefly.
- Add in cream, blend thoroughly.
- Churn in ice-cream machine according to manufacturer's instructions.
- A few min before finished, add in nuts and chocolate chips; continue churning.
- Makes 1 generous qt.
