Mediterranean Brunch Sandwich
- 1/4 cup baby spinach
- 1/4 sliced tomato
- 1/4 onion sliced
- 1 sliced bread
- 1 tbsp balsamic vinegar
- 1 tbsp whole grain mustard and balsamic spread
- 1 fried egg
- 1/2 cup meatballs chopped in halves
- 1 tbsp olive oil
- Saute meatballs and onions in olive oil.
- Add one tablespoon of balsamic vinegar.
- Slice bread and tomatoes.
- Toast the bread.
- The bread used in this recipe was good white bread purchase from the local bakery.
- Fry an egg over medium.
- Spread whole grain mustard and balsamic spread on toasted bread.
- Add one fried egg, sliced tomatoes, a few spinach leaves, and sauteed meatballs and onion to create the Mediterranean Brunch Sandwich!
