Mediterranean Brunch Sandwich

  1. Saute meatballs and onions in olive oil.
  2. Add one tablespoon of balsamic vinegar.
  3. Slice bread and tomatoes.
  4. Toast the bread.
  5. The bread used in this recipe was good white bread purchase from the local bakery.
  6. Fry an egg over medium.
  7. Spread whole grain mustard and balsamic spread on toasted bread.
  8. Add one fried egg, sliced tomatoes, a few spinach leaves, and sauteed meatballs and onion to create the Mediterranean Brunch Sandwich!
