Bell Pepper Casserole
- 3 large bell peppers, chopped
- 1 cup Italian flavor bread crumbs
- 1-1/2 cups grated sharp cheddar cheese
- 1-1/2 tablespoons butter, melted
- 1-1/2 tablespoons flour
- 1 cup milk
- 1 teaspoon salt
- 1/8 teaspoon pepper
- In medium mixing bowl, combine bell pepper, bread crumbs and 1/2 cup cheese.
- In saucepan, over low heat, stir in flour and cook until bubbly.
- Gradually add milk to flour and butter mixture. Stir constantly until mixture begins to thicken.
- When thickened, stir in 1/2 cheese, salt and pepper.
- Stir until cheese is melted. Add cheese sauce to bell pepper mixture.
- Spoon into well-greased 1-quart baking dish.
- Top with remaining 1/2 cup cheese.
- Bake in 350 degree oven for 45 minutes to one hour.
- Serves 4. This recipe goes well with bake Turkey or Hen.
