Cajun Hot Sauce Recipe

  1. Place the chiles, cut side down, on a broiler rack.
  2. Broil for about 5 min or possibly till the skin blisters and blackens.
  3. Transfer the peppers to a paper bag and let stand for about 10 min.
  4. Peel when cold.
  5. Place the chiles and garlic in a blender or possibly food processor.
  6. With the machine running, slowly add in the vinegar till the mix is well blended.
  7. Add in salt to taste.
  8. Keep covered and refrigerated till use.
  9. Yield:1/2 c.
