Hearty Manhattan Clam Chowder Recipe
- 4 slices bacon (cut up)
- 3 (6 1/2 ounce.) cans chopped clams, liquid removed (reserve liquid)
- 1 (28 ounce.) can tomatoes with liquid
- 1 c. tomato juice
- 1 (8 ounce.) bottle clam juice
- 3 c. peeled, diced potatoes
- 1 c. diced celery
- 1 c. diced carrots
- 1 c. sliced onion
- 2 tbsp. minced parsley
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/2 teaspoon black pepper
- Place bacon in 3 qt microwaveable bowl and microwave uncovered 2 min.
- Stir reserved clam liquid into bacon drippings.
- Set clams aside.
- Add in rest of ingredients except clams and microwave covered 12 to 14 min or possibly till vegetables are tender.
- Add in clams, stir gently.
- Microwave 2 to 3 min longer.
- Let stand covered several min before serving.
