Cheesey Spinach Enchilada s
- 1 red onion diced
- 2 can spinach drained well
- 2 tbsp chopped garlic
- 4 oz cream cheese
- 1 jalapeno diced fine ( can chop up canned jalepeno )
- 10 flour taco/fajita shells
- 4 cup mexi shredded cheese
- 1 large can of enchilata sauce
- 1 tbsp veg oil
- Saute onion in veg oil
- When cooked add spinach & garlic
- Mix well, add cream cheese and jalepeno, mix untill well combined
- Set aside to cool
- Add spinach mixture with a hand full of cheese, roll up , put seam side down in a sprayed large baking dish
- Pour sauce and the rest of the cheese over the enchiladas.
- Bake 350 for about 15 min
