Cheesey Spinach Enchilada s

• 1 red onion diced
• 2 can spinach drained well
• 2 tbsp chopped garlic
• 4 oz cream cheese
• 1 jalapeno diced fine ( can chop up canned jalepeno )
• 10 flour taco/fajita shells
• 4 cup mexi shredded cheese
• 1 large can of enchilata sauce
• 1 tbsp veg oil

1. Saute onion in veg oil
2. When cooked add spinach & garlic
3. Mix well, add cream cheese and jalepeno, mix untill well combined
4. Set aside to cool
5. Add spinach mixture with a hand full of cheese, roll up , put seam side down in a sprayed large baking dish
6. Pour sauce and the rest of the cheese over the enchiladas.
7. Bake 350 for about 15 min
