Gram's Apricot Bars Recipe
- 2/3 c. dry apricots
- 1/2 c. soft butter
- 1/4 c. granulated sugar
- 1 1/3 c. flour
- 1/2 teaspoon baking pwdr
- 1/4 teaspoon salt
- 1 c. packed brown sugar
- 2 Large eggs, well beaten
- 1/2 teaspoon vanilla extract
- 1/2 c. minced nuts
- Confectioners' sugar
- Cover apricots with water, boil 10 min.
- Drain; cold; chop.
- Heat oven to 350 degrees.
- Grease 8 x 8 x 2 inch pan.
- Mix butter, granulated sugar and 1 c. flour till crumbly.
- Pack into pan.
- Bake 25 min.
- Sift 1/3 c. flour, baking pwdr, salt.
- Gradually beat brown sugar into Large eggs; fold in flour mix.
- Then vanilla, nuts and apricots.
- Spread over baked layer.
- Bake 30 min or possibly till done.
- Cold.
- Cut into 32 bars.
- Roll in confectioners' sugar.
