Tomato Cup Cakes
- 1 cup Cherry Tomatoes
- 1 teaspoon Salt
- 4 Tablespoons Sour Cream
- 1 Tablespoon Minced Garlic
- 2 cups Mozzarella
- 1 Tablespoon Basil
- 2 Tablespoons Parmesan Cheese
- 16 ounces, weight Biscuit Dough
- Preheat oven to 350F.
- Take the tomatoes and slice em up.
- Lay the slices on a baking tray and lightly salt.
- Now, mix together 4 Tablespoons of sour cream, 1 Tablespoon of minced garlic, a couple handfuls of cheese, and the basil.
- I used fresh basil from my mother-in-laws garden.
- You can use a chopper, or you can look really cool and use a butcher knife.
- Even if you have no clue how to chop stuff with one, thats OK.
- There is only one rule when it comes to using this knife, do not chop off any fingers.
- Follow this rule, and youll be fine.
- When it comes to garlic, you can use fresh garlic bulbs or store bought minced garlic.
- The store bought is easier to measure and use.
- The great thing about this cheesy mixture is you can suit it to your tastes.
- If you like a lot of sour cream, pile it on.
- If you like a lot of cheese (like me) keep throwing it in by the fistful.
- Mix all this stuff together in a bowl.
- Now comes the fun part.
- Get out that canister of biscuits and open that sucker up.
- Take out a biscuit and tear it in half.
- Do this to each biscuit.
- Roll each half into a ball and flatten with your hands.
- Then place it in the bottom of a muffin pan.
- Reserve the other halves for later.
- Now you will want to place the sliced tomatoes on top of the dough.
- Next, add the cheese mixture.
- OK, remember the other halves of the biscuits?
- Place them on top and sprinkle with Parmesan.
- By now, your oven should be preheated to 350 degrees F. Put these puppies* in the oven and let them cook for 15-20 minutes.
- As long as you dont burn them, youll be OK.
- *No puppies were harmed or used, and even though my dog gets on my nerves by barking, I would never throw her in the oven.
- Now you are ready to serve!
- Scoop em out onto a plate and serve with a fork or spoon.
- Dont worry if they break apart when you serve them.
- I must say that these are scrumptious.
- They remind me of something a nice bistro in Charleston would serve.
- Very southern and very good.
- A great summer time treat.
- You could serve them as an appetizer, or as the main course.
- Try it out and tell me what you think.
