Apple-Raisin Stuffed Chicken
- 1/2 cup butter
- 1-1/2 cups Hot water
- 3 cups STOVE TOP Chicken Flavored Stuffing Mix
- 1-1/2 cups apples, chopped
- 1/2 cup raisins
- 1/2 cup Chopped pecans or walnuts, toasted
- 24 each boneless skinless chicken breasts (6 oz. each)
- 1/2 cup BULL'S-EYE Original Barbecue Sauce
- Place butter and hot water in large bowl; stir until butter is melted.
- Add stuffing, apples, raisins and pecans; stir just until stuffing is moistened.
- Cut lengthwise slice in one side of each chicken breast to form pocket; fill with 1 rounded tablespoonful stuffing mixture.
- Place in greased full size hotel pans (or 1 half size pan for trial recipe); brush with barbecue sauce.
- Spoon remaining stuffing mixture around chicken.
- Bake at 375F for 40 minutes or until chicken is cooked through (165F when tested in thickest part).
