Baked Quinoa & Cheese
- 1- 1/2 cup Quinoa, Uncooked
- 3 cups Water
- 18 teaspoons Salt
- 8 ounces, weight Shredded Low-fat Sharp Cheddar Cheese
- 23 cups Evaporated Milk Or Half And Half
- 5 Tablespoons Smart Balance Original Butter Spread
- 1/4 cups Italian Seasoned Breadcrumbs
- Preheat oven to 350 F.
- Place the quinoa in a mesh strainer and rinse with cold water for about 2 minutes.
- Place the quinoa, water and salt in a small saucepan and bring to a boil.
- Cover with a lid, reduce the heat, and simmer until cooked, about 20 to 25 minutes.
- Remove from heat and allow to cool just a bit.
- In a large bowl, combine cooked quinoa, cheese, evaporated milk and butter spread.
- Pour into a 2-quart casserole dish and sprinkle breadcrumbs on top.
- Bake for 20 to 25 minutes, until cheese is bubbly and breadcrumbs have turned a golden brown.
- Serve warm.
