Baked Quinoa & Cheese

  1. Preheat oven to 350 F.
  2. Place the quinoa in a mesh strainer and rinse with cold water for about 2 minutes.
  3. Place the quinoa, water and salt in a small saucepan and bring to a boil.
  4. Cover with a lid, reduce the heat, and simmer until cooked, about 20 to 25 minutes.
  5. Remove from heat and allow to cool just a bit.
  6. In a large bowl, combine cooked quinoa, cheese, evaporated milk and butter spread.
  7. Pour into a 2-quart casserole dish and sprinkle breadcrumbs on top.
  8. Bake for 20 to 25 minutes, until cheese is bubbly and breadcrumbs have turned a golden brown.
  9. Serve warm.
