Sweet Asiago Stuffed Chicken

  1. Dice the bell pepper and grate the asiago cheese.
  2. Add bell pepper, asiago cheese, blue cheese crumbles and brown sugar into a small mixing bowl.
  3. Cut through the mixture to blend ingredients to an even consistency.
  4. Set aside.
  5. Chicken breast preparation: insert knife into the large end of the breast, cutting it to open a pocket as large as possible.
  6. Take care to not cut through the breast.
  7. Completely stuff the pockets with the cheese mixture divided between the 3 breasts.
  8. Sprinkle stuffed breasts with chili powder.
  9. Using toothpicks, secure bacon while wrapping the entire breast.
  10. Sprinkle your favorite season blend over breasts and you are ready to grill!
  11. Preheat grill.
  12. Place bacon-wrapped chicken breasts on the grill on medium/low heat for 1012 minutes each side.
  13. Turn chicken breasts when bacon appears cooked (1012 minutes) on the bottom side and brush with BBQ sauce.
  14. Continue to brush BBQ sauce periodically for another 1012 minutes or until done.
  15. Remove from the grill and let stand 5 minutes.
  16. Best served with Bushs Bourbon and Brown Sugar Grillin Beans.
