Helen's Curried Chicken

  1. Chop onion, seed & dice pepper, chop celery and dice chicken.
  2. Saute onion & celery in margarine in large shallow pan.
  3. Saute til onion is soft, about 5 minutes.
  4. Stir in curry and flour, cook 1 minute.
  5. Add tomatoes, and green pepper, cook stirring often for 5 minutes.
  6. Stir in parsley, salt, pepper & broth.
  7. Lower heat and simmer for 10 minutes, covered.
  8. Add chicken and raisins; heat through and serve over cooked rice.
