Chicken N Veggies #RSC
- 4 chicken breasts
- 1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix
- 3 shallots
- 1 (16 ounce) package breadcrumbs
- 16 baby carrots
- 8 red potatoes
- 16 ounces Greek yogurt
- 12 cup parmesan cheese
- 1 bunch fresh chives
- 1 cup chicken broth
- Mix 1 container of breadcrumbs, 1/2 cup of Parmesan cheese and 1 package of HVR Seasoning Mix with 16 oz.
- of Greek Yogurt.
- Cover 4 chicken breast in a baking pan with the yogurt mixture and bake in 375* oven for about 25min.
- Take the chicken out and add the baby carrots, red potatoes (cut in quarters), chopped shallots and 1 cup chicken broth to the pan.
- Bake another 20-25 minute until potatoes are fork tender.
- Add fresh Chives over the top of the chicken and veggies.
