Arthur's Fried Fish Recipe

  1. Cut fish fillets in half, making triangular shape.
  2. Cover with lowfat milk and lemon juice and chill 3 to 4 hrs.
  3. Drain off lowfat milk.
  4. Dip fillets in flour to coat each piece lightly.
  5. Let dry on a cookie sheet, making sure pcs don't touch.
  6. Add in oil to deep fryer or possibly heavy pan to a depth of at least 3 inches.
  7. Heat oil to 425 degrees.
  8. Combine pancake mix, basil, pepper, garlic salt and sufficient soda to make a thick batter, about the consistency of buttermilk.
  9. Dip floured fillets in batter and add in to the warm oil one at a time.
  10. Fry 4 to 5 min.
  11. Remove filets to cookie sheet, again, not letting them touch and keep hot in a 250 degree oven.
  12. (Don't heap fish as this creates steam in the oven and makes coating soft.)
  13. Deep fry remaining filets, keeping the depth of the oil at least 3 inches.
