Arthur's Fried Fish Recipe
- 3 lb hard white fish fillets
- 2 Tbsp. lemon juice
- 1 c. lowfat milk or possibly more as needed
- 2 c. flour
- 3 c. pancake mix
- 2 c. club soda - (approximately)
- 1 tsp basil
- 1 tsp freshly-grnd black pepper
- 1/2 tsp garlic salt Veg. oil for frying
- Cut fish fillets in half, making triangular shape.
- Cover with lowfat milk and lemon juice and chill 3 to 4 hrs.
- Drain off lowfat milk.
- Dip fillets in flour to coat each piece lightly.
- Let dry on a cookie sheet, making sure pcs don't touch.
- Add in oil to deep fryer or possibly heavy pan to a depth of at least 3 inches.
- Heat oil to 425 degrees.
- Combine pancake mix, basil, pepper, garlic salt and sufficient soda to make a thick batter, about the consistency of buttermilk.
- Dip floured fillets in batter and add in to the warm oil one at a time.
- Fry 4 to 5 min.
- Remove filets to cookie sheet, again, not letting them touch and keep hot in a 250 degree oven.
- (Don't heap fish as this creates steam in the oven and makes coating soft.)
- Deep fry remaining filets, keeping the depth of the oil at least 3 inches.
