Low-cal Tofu & Yogurt Pudding

  1. Sprinkle the gelatin into the ice-cold water.
  2. Leave for 15 minutes to absorb the water, then dissolve in a microwave or double-broiler.
  3. Add the tofu, yogurt, sugar and lemon juice to a food processor and blend until smooth.
  4. Then, add the dissolved gelatin.
  5. Switch the food processor back on and, once again, blend until smooth.
  6. Pour the mixture into serving cups and leave to chill in the refrigerator.
  7. Once set, they're ready to eat!
