Scalloped Eggplant Italian Recipe

  1. Dip eggplant into beaten egg, then into crumbs.
  2. Brown in warm oil.
  3. Place 1/4 of the eggplant slices in the bottom of a 2 qt casserole and top with 1/4 of the cheese slices.
  4. Combine the tomato sauce with the remaining ingredients and spoon 1/4 of the sauce over the eggplant and cheese.
  5. Repeat layers till all of the ingredients are used, ending with the sauce.
  6. Cover and bake at 350 degrees for 1 hour.
