Moist Corn Bread Recipe
- 1 c. yellow cornmeal
- 1/2 c. flour
- 1 tbsp. baking pwdr
- 1 teaspoon salt
- 3 tbsp. sugar
- 1 c. lowfat sour cream
- 1/2 c. corn oil
- 2 Large eggs, slightly beaten
- 1 sm. can (1 c.) cream-style corn
- Beat lowfat sour cream, oil, and Large eggs.
- Combine dry ingredients.
- Fold into lowfat sour cream mix.
- Mix in cream-style corn.
- Don't overbeat.
- Pour into 8x8 pan or possibly 9x9 pan.
- Bake in preheated 350 degree oven.
- Cold; cut into squares.
