Monterey Jack Corn Fritters

  1. In mixing bowl, blend together all ingredients except cooking spray.
  2. Batter should be slightly thicker than pancake batter.
  3. Place a griddle over med-high heat until hot.
  4. Lightly spray griddle.
  5. Pour rounds of about 1/4 C batter at a time onto griddle.
  6. Cook until bubbles come to surface.
  7. Flip fritters and cook a few minutes more.
  8. Serve immediately.
