Bourbon Fruit Cookies Recipe
- 1 pound red candied cherries
- 1 pound green candied cherries
- 1 pound candied pineapple
- 1 pound pecans
- 1 (15 ounce.) pkg. golden brown raisins
- 3 c. all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon cloves
- 1/2 c. butter
- 1/2 c. brown sugar, firmly packed
- 4 Large eggs
- 1/2 c. bourbon
- 3 tbsp. lowfat milk
- Cut cherries, pineapple and pecans into small pcs.
- Combine with 1/2 c. flour, toss to coat well.
- Set aside.
- Combine remaining flour, cinnamon, nutmeg and cloves; set aside.
- Cream butter and sugar till fluffy.
- Add in Large eggs, beat well.
- Stir into fruit mix.
- Add in flour mix.
- Drop by tsp.
- on lightly greased cookie sheet.
- Bake at 300 degrees for 20 min.
- (There will be mostly fruit, very little batter - do not over bake).
- Makes 9 dozen.
