Green Pepper Jelly - Hot Pepper Jelly

  1. Clean the peppers, wearing rubber gloves.
  2. Discard all seeds excepts some from the hot peppers.
  3. Grind or chop very fine.
  4. Mix all ingredients except the Certo.
  5. Boil mixture about 5 minutes.
  6. Remove from heat and let stand for 20 minutes.
  7. Strain.
  8. Heat again to a hard rolling boil, stirring constantly for 2 minutes.
  9. Remove from heat and add 6-8 drops of red or green food coloring and the Certo.
  10. Stir well, put in jars and seal.
