Fancy Tomatoes on Toast
- 1 whole Tomato, Diced
- 1/4 teaspoons Good Balsamic Vinegar
- 1 teaspoon Good Olive Oil (I Use The Oil From The Marinated Feta)
- 1 bunch Small Handful Fresh Basil Leaves, Roughly Chopped
- 2 slices Toast (any Bread Is Fine, From Good Crusty Bread To Wonder White)
- 4 Tablespoons Marinated Goats Feta Cheese (or Enough To Cover Your Toast)
- Dice the tomato and put it in a small bowl along with a dash of balsamic, a good drizzle of olive oil and the chopped basil.
- Set aside while you toast your bread.
- Once the bread is toasted, spread with your marinated feta (I use a fork to squish it down and spread it out), pile with tomato salad, season with salt and pepper if you wish and voila!
- Your meal is ready.
- Easy peasy.
