Cinnamon Candy Caramel Corn (Gluten-Free Recipe)

  1. Heat oven to 200F.
  2. Place popcorn in roasting pan; set aside.
  3. Place waxed paper onto flat surface.
  4. Combine brown sugar, butter, corn syrup, 1/4 cup cinnamon candies and salt in 3-quart saucepan.
  5. Cook over medium heat, stirring occasionally, 6-8 minutes or until mixture comes to a full boil.
  6. Continue boiling, stirring occasionally, 5 minutes.
  7. Remove from heat; stir in vanilla and baking soda.
  8. Carefully pour hot syrup mixture over popcorn in pan; stir until well coated.
  9. Stir in remaining 1/4 cup cinnamon candies.
  10. Bake, stirring every 15 minutes, 1 hour or until caramel corn is crisp.
  11. Immediately place caramel corn onto waxed paper.
  12. Cool completely.
  13. Drizzle with melted candy coating; let stand until set.
  14. Break into bite-sized pieces.
  15. Store in container with tight-fitting lid.
