Detoxinista's Greenbean Casserole

  1. Melt coconut oil, or butter, in a large skillet and add the sliced onions.
  2. Saute over medium-low heat for about 45 minutes, stirring occasionally.
  3. Use a splash of water, as needed, to prevent sticking.
  4. Once the onions are tender and golden in color, remove from heat and set aside in a bowl for later.
  5. Fit a steamer basket into a saucepan, fill with about one inch of water.
  6. Add parsnips & bring water to a boil over high heat.
  7. Cover and reduce heat to low.
  8. Let steam for about 8 minutes, or until they can easily be pierced.
  9. Place drained parsnips in blender container, and set aside.
  10. Break the green beans into one inch pieces.
  11. Toss them into the steamer basket.
  12. Bring to a boil, cover, and steam for 6-8 minutes.
  13. Transfer green beans to an 8" x 8" glass baking dish.
  14. She says that at this point to cook (steam) the green beans to be as tender as you like because they won't continue to cook, even though they are baked later.
  15. When the onions are done, use the same pan to saute the mushrooms and the garlic.
  16. Melt coconut oil & saute garlic for about 3 minutes.
  17. Add mushrooms, cook for another 6 minutes, until liquid is released from mushrooms.
  18. Pour half of the mixture into the green bean dish, and half into the blender with parsnips.
  19. Add water, sea salt, and nutritional yeast to the parnsips and mushroom mixture.
  20. Blend until creamy.

  23. Pour the mushroom/parsnip sauce over the green beans and mushrooms in the baking dish.
  24. Stir to combine.
  25. Top with caramelized onions to finish.
  26. She says that you could cover the dish and store it in the refrigerator until you're ready to serve it.
  27. And that when you are ready to bake, preheat the oven to 350F & bake uncovered for around 30 minutes, or until bubbly.
