Chinese Sweet `N Sour Beef Recipe

  1. With sharp knife, cut beef into thin slices.
  2. In large skillet heat 3 Tbsp.
  3. oil till warm but not smoking, quickly brown beef over heat, stirring rapidly 3-4 min.
  4. Remove meat and pan drippings to platter.
  5. Heat remaining 2 Tbsp.
  6. oil in same skillet.
  7. Add in onion, water chestnuts and green pepper.
  8. Stir fry till tender crisp, about 3 min.
  9. Add in undrained pineapple, ketchup, vinegar, soy sauce and sugar.
  10. Heat to boiling.
  11. Mix cornstarch smoothly with cool water.
  12. Add in to sauce in skillet and heat, stirring, till sauce clears and thickens.
  13. Return meat and drippings to skillet; heat through.
  14. Serve over warm cooked rice.
