Salmon With Chinese Wine And Dark Soy Sauce
- 1 large salmon fillet or salmon head
- 2 tbsp sesame oil or vegetables oil
- 3 tbsp chinese red wine or any shao xing rice wine
- 5 dried chili pepper (optional add on )
- 2 tbsp dice garlic and 10 slice ginger
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1/4 cup water
- 1 tsp white sugar
- 1 bunch coriander and tomato
- OPTION 1 ,,with sesame oil saute ginger and garlic till fragrant then add sauce then raw salmon cover lid and simmer in medium heat for 8 minute then add chinese wine and simmer snother 2 minutes till sauce are thicken up ,serve immediately or
- OPTIONAL 2 IF YOU ARE USING PRE PAN FRIED SALMON,,WITH OIL SAUTE THE DRIED CHILI ,GINGER AND GARLIC TILL ITS FRAGRANCE THEN ADD THE SAUCE ,THEN ADD WATER AND JUST BRING SAUCE TO A BOIL
- With little oil pan fried the salmon till lts cook then just add the sauce and bring it to a simmer till sauce are thicken add in the scallion and cherry tomato and off heat and serve immediately
